Almond Toffee Sandies

Ingredients
- 1 cup room temperature butter (no substitutes)
- 1 cup sugar
- 1 cup powdered sugar
- 1 cup vegetable oil or 1 cup canola oil
- 2 eggs
- 1 teaspoon almond extract
- 3 1/2 cups all-purpose flour
- 1 cup whole wheat flour or 1 cup all-purpose flour
- 1 teaspoon baking soda, minus 1 pinch
- 1 teaspoon cream of tartar
- 1 teaspoon salt
- 2 cups chopped almonds
- 1 (6 ounce) package english toffee pieces
- 1/4 cup sugar, for rolling
Recipe
- 1 1. pre-heat oven to 350 degrees.
- 2 2. in large mixing bowl, cream butter and sugars. add oil, eggs & almond extract; mix well.
- 3 3. in separate bowl, combine flour(s), baking soda, cream of tartar and salt. sift twice before adding gradually to creamed mixture till well combined. stir in almonds and toffee bits.
- 4 4, shape into 1 in balls, roll in sugar and place on ungreased or parchment lined baking sheet pans, flatten w/fork. bake @ 350 degrees for 12 - 14 minute or until lightly browned.
