Buffalo Chicken Chili

Ingredients

  • Servings: 4
  • 3 chicken breasts, skinless and boneless
  • 3 tablespoons cayenne pepper sauce (such as frank's)
  • 1/4 cup flour
  • 4 tablespoons butter
  • 3 stalks celery, diced
  • 1/2 cup cayenne pepper sauce
  • 1 (12 ounce) can beer
  • 2 cups cooked beans (cannelloni, great northern, pinto)
  • 1 tablespoon mayonnaise
  • 3/4 lb blue cheese, crumbled (optional)

Recipe

  • 1 marinate chicken breasts in 3 t hot sauce overnight.
  • 2 melt the butter in large skillet.
  • 3 cut the chicken into half-inch cubes and dredge in the flour.
  • 4 saute them in skillet until golden brown.
  • 5 add celery and continue to simmer for 2-3 more minutes.
  • 6 add 1/2 cup hot sauce to skillet mixture, mix well.
  • 7 add beer to chicken mixture, mix well.
  • 8 add beans and mayonnaise.
  • 9 bring to a boil and then reduce to a simmer, partially covered, until chicken is done, about 20-30 minutes.
  • 10 ladle into bowls and sprinkle with crumbled blue cheese, if desired.
