Asparagus Almond Casserole

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 5 tablespoons butter
  • 5 tablespoons flour
  • 3/4 cup milk
  • 3/4 cup asparagus liquid
  • 3/4 cup mayonnaise
  • 3 (15 ounce) cans asparagus
  • 5 hard-boiled eggs, sliced
  • 3/4 cup blanched almond
  • 3/4 cup cracker crumb

Recipe

  • 1 melt butter in skillet.
  • 2 add flour and blend.
  • 3 add milk and asparagus liquid.
  • 4 cook over low heat until thick.
  • 5 add mayonnaise and mix well until sauce is formed.
  • 6 in bottom of 2-quart baking dish arrange a layer of asparagus, eggs, and almonds.
  • 7 cover with half of the sauce.
  • 8 repeat.
  • 9 top casserole with cracker crumbs.
  • 10 bake at 300 to 350 f for 30 minutes.
