Cheesy Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 4 tablespoons butter
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 teaspoon paprika
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon dried thyme
  • 2 ounces sharp cheddar cheese, diced into cubes

Recipe

  • 1 preheat oven to 375°f.
  • 2 generously grease 9 muffin cups or use liners.
  • 3 melt butter and set aside.
  • 4 in a large bowl, sift together flour, baking powder, sugar, salt and paprika.
  • 5 in a separate bowl, combine eggs, milk, melted butter and thyme until just moistened (do not be over-enthusiastic and mix until smooth).
  • 6 place a heaped spoonful into prepared muffin cups, place a few pieces of cheese cubes, then top with another layer of batter (if you have any empty muffin cups, fill it with water for even baking).
  • 7 bake until puffy and golden, approximately 25 minutes.
  • 8 stand 5 minutes before unmolding onto a rack.
