Cheesy Baked Spinach And Eggs

Ingredients

- 1/4-1/2 cup butter
- 1 onion, chopped
- 1 -2 tablespoon fresh minced garlic
- 1 lb fresh spinach (cleaned, stemmed and cut into strips)
- 2 teaspoons seasoning salt (to taste) or 2 teaspoons salt
- 2 cups grated mozzarella cheese, divided
- 1 teaspoon paprika
- black pepper
- 1 pinch nutmeg
- 4 large eggs
- 1/4 cup 18% table cream or 1/4 cup half-and-half cream
- cayenne pepper (optional)
- 1/3 cup grated parmesan cheese (or to taste)
Recipe
- 1 set oven to 350 degrees.
- 2 butter a medium casserole dish.
- 3 in a large saucepan melt butter over medium heat; add in onion and garlic, saute for about 3-4 minutes.
- 4 add in fresh spinach and seasoned salt, reduce the heat to low.
- 5 cover and steam for about 5 minutes; remove from heat.
- 6 sprinkle 1 cup (or more) mozza cheese into the bottom of the casserole dish, then spoon the spinach mixture over the cheese.
- 7 sprinkle the paprika, nutmeg and black pepper over the spinach.
- 8 in a medium bowl beat the eggs with cream and cayenne pepper (if using) pour over the spinach mixture.
- 9 top with 1/3 cup grated parmesan cheese (or to taste) then sprinkle with remaining 1 cup mozzarella cheese.
- 10 bake uncovered for about 15-20 minutes or until the cheese bubbles.
- 11 let stand 5 minutes beeefore cutting.
