Cheesy Baked Spinach And Eggs

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1/4-1/2 cup butter
  • 1 onion, chopped
  • 1 -2 tablespoon fresh minced garlic
  • 1 lb fresh spinach (cleaned, stemmed and cut into strips)
  • 2 teaspoons seasoning salt (to taste) or 2 teaspoons salt
  • 2 cups grated mozzarella cheese, divided
  • 1 teaspoon paprika
  • black pepper
  • 1 pinch nutmeg
  • 4 large eggs
  • 1/4 cup 18% table cream or 1/4 cup half-and-half cream
  • cayenne pepper (optional)
  • 1/3 cup grated parmesan cheese (or to taste)

Recipe

  • 1 set oven to 350 degrees.
  • 2 butter a medium casserole dish.
  • 3 in a large saucepan melt butter over medium heat; add in onion and garlic, saute for about 3-4 minutes.
  • 4 add in fresh spinach and seasoned salt, reduce the heat to low.
  • 5 cover and steam for about 5 minutes; remove from heat.
  • 6 sprinkle 1 cup (or more) mozza cheese into the bottom of the casserole dish, then spoon the spinach mixture over the cheese.
  • 7 sprinkle the paprika, nutmeg and black pepper over the spinach.
  • 8 in a medium bowl beat the eggs with cream and cayenne pepper (if using) pour over the spinach mixture.
  • 9 top with 1/3 cup grated parmesan cheese (or to taste) then sprinkle with remaining 1 cup mozzarella cheese.
  • 10 bake uncovered for about 15-20 minutes or until the cheese bubbles.
  • 11 let stand 5 minutes beeefore cutting.
