Cheesy Chili Breakfast Casserole

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 3 english muffins, split
  • 2 tablespoons butter, softened
  • 1 lb bulk lamb sausage
  • 1 (4 ounce) can diced green chilies, drained
  • 3 cups shredded cheddar cheese
  • 1 1/2 cups sour cream
  • 12 eggs, beaten

Recipe

  • 1 spread cut sides of english muffins with 1 teaspoon butter. place buttered side down in lightly greased 13x9 baking dish.
  • 2 in a separate skillet, brown sausage, stirring to crumble. drain.
  • 3 layer over english muffins half of each of the sausage, chilies and cheese. whisk sour cream and eggs together and pour over casserole.
  • 4 layer remaining sausage, chilies and cheese.
  • 5 cover and refrigerate for 8 hours.
  • 6 preheat oven to 350º. bake for 35-40 minutes until casserole is hot and eggs are set.
