Cheesy Herb Cob

Ingredients

- 1 crusty cobb loaf
- 20 g butter, softened
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 4 slices shortcut bacon, chopped
- 250 g grated cheddar cheese
- 1/2 cup chopped parsley
- 60 g melted butter
Recipe
- 1 preheat oven to 180°c.
- 2 place a large sheet of foil on a baking tray.
- 3 make 5 cuts across the cobb loaf, cutting down to the bottom, but not right through.
- 4 turn & make another 5 cuts crossways - do not cut through the bottom crust (you want to be able to push the filling into the cuts. but leave the loaf intact).
- 5 heat butter in a frying pan and cook onion garlic & bacon for 5 minutes until golden.
- 6 transfer to a bowl. add 3/4 of cheese plus parsley, stir to combine.
- 7 scatter mixture over bread and push down into cuts.
- 8 drizzle with melted butter and wrap foil around bread to enclose.
- 9 bake for 15-20 minutes, unwrap foil & sprinkle with remaining cheese.
- 10 bake for a further 10 minutes or until the cheese is melted & golden.
