Cheesy Herb Cob

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 1 crusty cobb loaf
  • 20 g butter, softened
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 4 slices shortcut bacon, chopped
  • 250 g grated cheddar cheese
  • 1/2 cup chopped parsley
  • 60 g melted butter

Recipe

  • 1 preheat oven to 180°c.
  • 2 place a large sheet of foil on a baking tray.
  • 3 make 5 cuts across the cobb loaf, cutting down to the bottom, but not right through.
  • 4 turn & make another 5 cuts crossways - do not cut through the bottom crust (you want to be able to push the filling into the cuts. but leave the loaf intact).
  • 5 heat butter in a frying pan and cook onion garlic & bacon for 5 minutes until golden.
  • 6 transfer to a bowl. add 3/4 of cheese plus parsley, stir to combine.
  • 7 scatter mixture over bread and push down into cuts.
  • 8 drizzle with melted butter and wrap foil around bread to enclose.
  • 9 bake for 15-20 minutes, unwrap foil & sprinkle with remaining cheese.
  • 10 bake for a further 10 minutes or until the cheese is melted & golden.
