Better Squash Casserole (no Bread Crumbs, Crackers Or Stuffing!)

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 6 yellow squash
  • 1 onion
  • 4 tablespoons butter
  • 1 egg
  • 2 cups shredded cheese

Recipe

  • 1 preheat oven to 350°f.
  • 2 chop yellow squash and onion into small, uniform pieces.
  • 3 add the squash and onion to a medium sized pot and cook in the butter over medium heat until soft and mushy.
  • 4 season cooked mixture to taste.
  • 5 beat the egg with a fork and add it to the squash mixture.
  • 6 add one cup of shredded cheese to the mixture and stir until melted and mixed.
  • 7 pour mixture into casserole dish and top with remaining cheese.
  • 8 bake for 30 min or until cheese lightly browned.
