Carrots With Ginger

Ingredients

- 2 lbs carrots, peeled, cut diagonally into 1/4-inch-thick rounds
- 1 cup freshly squeezed orange juice
- 1/4 cup butter
- 2 tablespoons sugar
- 1 1/2 tablespoons grated peeled fresh ginger
- 2 tablespoons chopped fresh parsley
Recipe
- 1 place carrots, orange juice, butter, sugar and ginger in large skillet over medium-high heat.
- 2 bring to boil; cover and cook 3 minutes.
- 3 uncover and simmer until liquid glazes carrots, about 10 minutes.
- 4 season to taste with salt and pepper.
