Carrot-poppy Seed Muffins

Ingredients
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/4 cup brown sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 egg, beaten
- 1/2 cup milk
- 2 tablespoons butter or 2 tablespoons margarine, melted
- 1/3 cup shredded carrot
- 3 tablespoons poppy seeds
Recipe
- 1 in a bowl, combine flours, sugar, baking powder, and salt; stir to mix.
- 2 in another bowl, combine the egg, milk, and melted butter; add to dry ingredients.
- 3 stir until moist and lumpy batter forms.
- 4 stir in carrots and poppy seeds.
- 5 spoon batter into greased muffin tins.
- 6 bake in a preheated 375° oven for 20-25 minutes or until a toothpick comes out clean.
