Carrot-poppy Seed Muffins

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1/2 cup milk
  • 2 tablespoons butter or 2 tablespoons margarine, melted
  • 1/3 cup shredded carrot
  • 3 tablespoons poppy seeds

Recipe

  • 1 in a bowl, combine flours, sugar, baking powder, and salt; stir to mix.
  • 2 in another bowl, combine the egg, milk, and melted butter; add to dry ingredients.
  • 3 stir until moist and lumpy batter forms.
  • 4 stir in carrots and poppy seeds.
  • 5 spoon batter into greased muffin tins.
  • 6 bake in a preheated 375° oven for 20-25 minutes or until a toothpick comes out clean.
