Cheesy Baked Supper Omelets

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 tablespoon butter
  • 1/2 cup red bell peppers or 1/2 cup green bell pepper, chopped
  • 1/4 cup onion, chopped
  • 12 eggs
  • 1 (8 ounce) container sour cream
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 1/2 cups monterey jack and cheddar cheese blend, shredded

Recipe

  • 1 heat oven to 375 degrees f.
  • 2 spray 12x8-inch (2-quart) glass baking dish with cooking spray.
  • 3 in 8-inch skillet, melt butter over medium heat.
  • 4 add bell pepper and onion; cook 2-3 minutes, stirring occasionally, until tender.
  • 5 in large bowl, beat eggs, sour cream, salt and pepper with wire whisk until well blended.
  • 6 stir in bell pepper mixture and cheese.
  • 7 pour into baking dish.
  • 8 bake uncovered 20-25 minutes or until eggs are set.
  • 9 cut omelet into squares to serve.
