Cheesy Baked Supper Omelets

Ingredients
- Servings: 6
- 1 tablespoon butter
- 1/2 cup red bell peppers or 1/2 cup green bell pepper, chopped
- 1/4 cup onion, chopped
- 12 eggs
- 1 (8 ounce) container sour cream
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 1/2 cups monterey jack and cheddar cheese blend, shredded
Recipe
- 1 heat oven to 375 degrees f.
- 2 spray 12x8-inch (2-quart) glass baking dish with cooking spray.
- 3 in 8-inch skillet, melt butter over medium heat.
- 4 add bell pepper and onion; cook 2-3 minutes, stirring occasionally, until tender.
- 5 in large bowl, beat eggs, sour cream, salt and pepper with wire whisk until well blended.
- 6 stir in bell pepper mixture and cheese.
- 7 pour into baking dish.
- 8 bake uncovered 20-25 minutes or until eggs are set.
- 9 cut omelet into squares to serve.
