Cauliflower Casserole With Stuffing Topping

Total Time: 1 hr 10 mins Preparation Time: 40 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 (10 ounce) packages frozen cauliflower or 2 (10 ounce) packages equivalent fresh cauliflower
  • 3 tablespoons butter or 3 tablespoons margarine
  • 1/4 cup flour
  • 2 cups milk
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (8 ounce) package herb stuffing mix (crumbs, not cubes)
  • 1 cup water
  • 1/2 cup butter, melted

Recipe

  • 1 cook and drain cauliflower.
  • 2 place in a 2-quart casserole.
  • 3 melt butter, stir in flour and cook a few minutes, stirring constantly.
  • 4 remove from heat and blend in milk.
  • 5 return to stove and bring to a boil, stirring constantly.
  • 6 simmer until thickened.
  • 7 add salt and pepper.
  • 8 pour over cauliflower in casserole.
  • 9 topping: combine stuffing mix, water and butter.
  • 10 spoon on top of casserole, pressing down.
  • 11 bake at 350 degrees for 30 minutes.
