Cauliflower Casserole With Stuffing Topping

Ingredients
- Servings: 6
- 2 (10 ounce) packages frozen cauliflower or 2 (10 ounce) packages equivalent fresh cauliflower
- 3 tablespoons butter or 3 tablespoons margarine
- 1/4 cup flour
- 2 cups milk
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 (8 ounce) package herb stuffing mix (crumbs, not cubes)
- 1 cup water
- 1/2 cup butter, melted
Recipe
- 1 cook and drain cauliflower.
- 2 place in a 2-quart casserole.
- 3 melt butter, stir in flour and cook a few minutes, stirring constantly.
- 4 remove from heat and blend in milk.
- 5 return to stove and bring to a boil, stirring constantly.
- 6 simmer until thickened.
- 7 add salt and pepper.
- 8 pour over cauliflower in casserole.
- 9 topping: combine stuffing mix, water and butter.
- 10 spoon on top of casserole, pressing down.
- 11 bake at 350 degrees for 30 minutes.
