Best Lemon Bars

Ingredients
- 3/4 cup butter
- 2 cups all-purpose flour
- 1/2 cup packed light brown sugar
- 1/2 teaspoon salt
- 4 large eggs
- 1 1/2 cups granulated sugar
- 3/4 cup fresh lemon juice
- 1/3 cup all-purpose flour
- 3 tablespoons confectioners' sugar, for sprinkling
Recipe
- 1 shortbread base:preheat oven to 350 degrees.
- 2 cut butter into 1/2 inch pieces.
- 3 in food processor, process all ingredients until mixture begins to form small lumps.
- 4 press mixture evenly into 9x13 baking pan.
- 5 bake in middle of oven until golden, about 20 minutes.
- 6 while shortbread is baking, prepare topping.
- 7 topping: in bowl whisk together eggs and granulated sugar until combined well.
- 8 stir in lemon juice and flour.
- 9 pour lemon mixture over hot shortbread base.
- 10 reduce oven temperature to 300 degrees and bake in middle of oven until set, about 30 minutes.
- 11 let cool completely in pan then sprinkle with confectioner's sugar.
