Charlotte's Lemon Loaf

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • 125 g butter
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups self raising flour
  • 1 pinch salt
  • 1 lemon juice, and rind
  • 125 ml milk

Recipe

  • 1 preheat oven to 180.
  • 2 grease and line loaf tin with baking paper.
  • 3 beat the butter and sugar until pale and creamy.
  • 4 add the eggs separately, beating well after each egg.
  • 5 stir in flour, salt and lemon rind.
  • 6 gradually add warmed milk.
  • 7 transfer the mixture to the prepared tin and bake for 45 - 50 minutes or until a skewer instead into the centre comes out clean (do not open the one door while the loaf is cooking).
  • 8 remove the loaf from the tin, and while it is still warm, sprinkle liberally with caster sugar.
  • 9 pour over the lemon juice then sprinkle liberally with more sugar.
  • 10 stand for 15 to 20 minutes before serving.
