Charlotte's Lemon Loaf

Ingredients
- 125 g butter
- 1 cup sugar
- 2 eggs
- 1 1/2 cups self raising flour
- 1 pinch salt
- 1 lemon juice, and rind
- 125 ml milk
Recipe
- 1 preheat oven to 180.
- 2 grease and line loaf tin with baking paper.
- 3 beat the butter and sugar until pale and creamy.
- 4 add the eggs separately, beating well after each egg.
- 5 stir in flour, salt and lemon rind.
- 6 gradually add warmed milk.
- 7 transfer the mixture to the prepared tin and bake for 45 - 50 minutes or until a skewer instead into the centre comes out clean (do not open the one door while the loaf is cooking).
- 8 remove the loaf from the tin, and while it is still warm, sprinkle liberally with caster sugar.
- 9 pour over the lemon juice then sprinkle liberally with more sugar.
- 10 stand for 15 to 20 minutes before serving.
