Ingredients
- 1 cup butter
- 2 cups sugar
- 4 eggs
- 1 cup mashed banana
- 4 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 (20 ounce) can crushed pineapple, drained
- 3/4 cup chopped pecans
- 1 cup coconut
Recipe
- 1 grease 2 - 8x4-inch loaf pans and set aside.
- 2 in a large mixing bowl with beaters, cream the butter and sugar. stir in the eggs and bananas.
- 3 in a separate bowl mix the flour, baking powder, baking soda and salt, then add to banana mixture. blend well, but do not over mix (which will create a coarse texture).
- 4 add pineapple, pecans and coconut; mix on low speed until blended.
- 5 pour into prepared pans (about two-thirds full) and bake at 325f for 60 to 80 minutes.
