Aloha Bread

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 1 cup mashed banana
  • 4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 (20 ounce) can crushed pineapple, drained
  • 3/4 cup chopped pecans
  • 1 cup coconut

Recipe

  • 1 grease 2 - 8x4-inch loaf pans and set aside.
  • 2 in a large mixing bowl with beaters, cream the butter and sugar. stir in the eggs and bananas.
  • 3 in a separate bowl mix the flour, baking powder, baking soda and salt, then add to banana mixture. blend well, but do not over mix (which will create a coarse texture).
  • 4 add pineapple, pecans and coconut; mix on low speed until blended.
  • 5 pour into prepared pans (about two-thirds full) and bake at 325f for 60 to 80 minutes.
