Baked Mei With Brown Sugar

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 ripe breadfruit (skin should be yellow and brown, flesh soft)
  • 1/4 cup butter
  • 3 tablespoons brown sugar

Recipe

  • 1 wash the breadfruit and remove core by pulling stem.
  • 2 trim top edge of the breadfruit if needed.
  • 3 fill cavity with butter and brown sugar.
  • 4 cover breadfruit with foil and place in a baking pan with 1 cup water (to prevent scorching).
  • 5 bake for 1 hour at 350 degrees.
  • 6 to serve, unwrap breadfruit and cut in half lengthwise.
  • 7 scoop breadfruit with a large spoon to serve, making sure each piece is topped with some of the sugar and butter in the center.
