Blueberry Banana Walnut Bread

Ingredients
- 1 ripe banana, peeled and mashed
- 3/4 cup flax seed, ground
- 2 egg whites
- 1/3 cup honey
- 1 cup low-fat buttermilk
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup whole wheat flour
- 3/4 cup oat bran
- 2 tablespoons chickpea flour
- 1 cup blueberries
- 1/2 cup walnuts, chopped
Recipe
- 1 preheat oven to 375. prepare a loaf pan.
- 2 in large bowl, stir together banana, flaxseed, egg whites, honey and buttermilk.
- 3 in a separate bowl, combine dry ingredients. fold into banana mixture and stir in blueberries and walnuts.
- 4 pour into loaf pan. bake 45-50 minutes.
