Blueberry Banana Walnut Bread

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • 1 ripe banana, peeled and mashed
  • 3/4 cup flax seed, ground
  • 2 egg whites
  • 1/3 cup honey
  • 1 cup low-fat buttermilk
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup whole wheat flour
  • 3/4 cup oat bran
  • 2 tablespoons chickpea flour
  • 1 cup blueberries
  • 1/2 cup walnuts, chopped

Recipe

  • 1 preheat oven to 375. prepare a loaf pan.
  • 2 in large bowl, stir together banana, flaxseed, egg whites, honey and buttermilk.
  • 3 in a separate bowl, combine dry ingredients. fold into banana mixture and stir in blueberries and walnuts.
  • 4 pour into loaf pan. bake 45-50 minutes.
