Carrots Amaretto

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 lb carrot
  • 3 tablespoons butter
  • 2 tablespoons sugar
  • 1/4 cup amaretto
  • salt and pepper

Recipe

  • 1 parboil sliced carrots (i usually use the baby carrots whole) until al dente, about 10 minutes.
  • 2 drain and rinse under cold water to stop cooking. this can be done a couple of hours ahead of time.
  • 3 heat butter over medium heat until melted. add carrots, sugar and heat to caramelize sugar.
  • 4 add amaretto and cook to reduce sauce to a glaze.
  • 5 season to taste with salt and pepper.
  • 6 serve immediately.
