Carrots Amaretto

Ingredients
- Servings: 8
- 1 lb carrot
- 3 tablespoons butter
- 2 tablespoons sugar
- 1/4 cup amaretto
- salt and pepper
Recipe
- 1 parboil sliced carrots (i usually use the baby carrots whole) until al dente, about 10 minutes.
- 2 drain and rinse under cold water to stop cooking. this can be done a couple of hours ahead of time.
- 3 heat butter over medium heat until melted. add carrots, sugar and heat to caramelize sugar.
- 4 add amaretto and cook to reduce sauce to a glaze.
- 5 season to taste with salt and pepper.
- 6 serve immediately.
