Aloha Loaf

Total Time: 1 hr 10 mins Preparation Time: 15 mins Cook Time: 55 mins

Ingredients

  • 1/4 cup margarine
  • 1 cup sugar
  • 2 eggs or 1/2 cup liquid egg substitute
  • 1/4 cup buttermilk
  • 1/2 cup banana, mashed
  • 1 (7 ounce) can crushed pineapple in juice
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup maraschino cherry, chopped

Recipe

  • 1 preheat oven to 350°f
  • 2 in a large mixing bowl, cream margarine and sugar.
  • 3 beat in eggs, one at a time.
  • 4 combine the banana and buttermilk in a small cup.
  • 5 in a separate small bowl, stir together the flour, soda, baking powder and salt.
  • 6 add the flour mixture alternately with the banana and buttermilk mixture to the egg mixture.
  • 7 fold in chopped cherries.
  • 8 pour into an ungreased loaf pan.
  • 9 bake for 50 to 55 minutes or until a toothpick inserted into the loaf returns clean.
  • 10 makes 1 loaf or 18 slices.
  • 11 calories per serving: 143 fat: 3 gm. cholesterol: 30 mg. with egg; 0 gm. with substitute sodium: 142mg.
  • 12 for exchange diets, count: 1 bread/starch, 1/2 fruit and 1/2 fat.
