Ingredients
- 1/4 cup margarine
- 1 cup sugar
- 2 eggs or 1/2 cup liquid egg substitute
- 1/4 cup buttermilk
- 1/2 cup banana, mashed
- 1 (7 ounce) can crushed pineapple in juice
- 2 cups flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup maraschino cherry, chopped
Recipe
- 1 preheat oven to 350°f
- 2 in a large mixing bowl, cream margarine and sugar.
- 3 beat in eggs, one at a time.
- 4 combine the banana and buttermilk in a small cup.
- 5 in a separate small bowl, stir together the flour, soda, baking powder and salt.
- 6 add the flour mixture alternately with the banana and buttermilk mixture to the egg mixture.
- 7 fold in chopped cherries.
- 8 pour into an ungreased loaf pan.
- 9 bake for 50 to 55 minutes or until a toothpick inserted into the loaf returns clean.
- 10 makes 1 loaf or 18 slices.
- 11 calories per serving: 143 fat: 3 gm. cholesterol: 30 mg. with egg; 0 gm. with substitute sodium: 142mg.
- 12 for exchange diets, count: 1 bread/starch, 1/2 fruit and 1/2 fat.
