Apple Sage Stuffed Lamb Chops

Ingredients

- 4 thick boneless lamb chops
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 2 tablespoons butter
- 1 cup whole wheat bread, cubed
- 1 apple, peeled,cored & diced
- 1 teaspoon dried sage
- 1/2 teaspoon coriander
- 1/4 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon oil
- 1 teaspoon butter
- 1/2-3/4 cup chicken broth
Recipe
- 1 cut a pocket into each lamb chop and trim fat.
- 2 saute onion & celery until soft in 2 t. butter.
- 3 add bread cubes, apple, sage & coriander.
- 4 mix well & moisten with 2 t. broth.
- 5 stuff the chops with the dressing.
- 6 hold together with toothpicks if you wish.
- 7 mix together flour, salt& pepper.
- 8 dredge the chops in mixture.
- 9 heat oil & 1 t. butter.
- 10 sear the chops & put into a sprayed baking dish.
- 11 pour remaining broth over chops, cover & bake at 350 degrees for 1 hour.
