Baked Lemon Chicken With Raisins And Cognac

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • Servings: 6
  • 3/4 cup golden raisin
  • 1/4 cup cognac
  • 3 tablespoons butter
  • 1 tablespoon vegetable oil
  • 4 lbs chicken, cut up
  • 4 medium onions, sliced
  • 1 lemon, rind minced
  • 3 tablespoons fresh lemon juice

Recipe

  • 1 in a small bowl, combine raisins, cognac and ½ cup water; soak for 45 minutes.
  • 2 in a large frying pan, heat butter and vegetable oil over medium heat. sauté chicken in batches until brown, 5 minutes per side. transfer to a roasting pan.
  • 3 preheat oven to 350. add onions to drippings in frying pan and cook until tender, about 5 minutes.
  • 4 add raisins cognac mixture, lemon rind and lemon juice. mix and pour over chicken.
  • 5 bake for 50 minutes until chicken is tender.
