Brussels Sprouts Extraordinaire

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 small onion, sliced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon sugar
  • 1 cup tomato juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 (10 ounce) packages frozen brussels sprouts or 1 1/4 lbs fresh brussels sprouts, cooked and drained
  • 1/4 cup shredded cheddar cheese

Recipe

  • 1 in a skillet, saute onion in butter until tender. remove onion and set aside.
  • 2 blend flour into the drippings.
  • 3 add tomato juice; cook and stir over low heat until thickened and smooth. stir in the sugar, salt, pepper and onion.
  • 4 arrange the brussels sprouts in a greased 1 quart baking dish; top with the tomato sauce.
  • 5 sprinkle with cheese.
  • 6 bake, uncovered, at 350 degrees for 15 minutes.
