Authentic German Onion Pie (schwabischer Zwiebelkuchen)

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • 375 g flour
  • 1/2 teaspoon salt
  • 15 g yeast
  • 1 tablespoon sugar
  • 1/2 liter milk
  • 60 g soft butter (not directly out of fridge but warmed a little)
  • 50 g ham, in cubes
  • 50 g butter
  • 1 kg onion, slices
  • 3 eggs
  • pepper
  • salt
  • 4 tablespoons sour cream
  • 1 teaspoon caraway seeds (kuemmel) or 1 teaspoon cumin or 1 teaspoon nutmeg

Recipe

  • 1 put flour into a bowl, add sugar, make a dent in the middle where you put the yeast.
  • 2 add the sugar and a little of the milk and mix well.
  • 3 let the dough rest for 15 minutes (cover bowl with towel).
  • 4 add the rest of the milk and mix well again.
  • 5 let rest for another 30 minute.
  • 6 roll dough and put on a baking plate.
  • 7 make a raised edge of the dough.
  • 8 for the topping: fry the ham in butter.
  • 9 add the sliced onions and fry until they are soft and glassy.
  • 10 mix eggs with pepper, salt, sour cream and cummin/nutmeg.
  • 11 add to the onions.
  • 12 put everything ontop of the dough.
  • 13 bake for 30 min at 190°c.
