Brian Shaw's Mom's Spinach Souffle

Ingredients
- Servings: 6
- 1 (10 ounce) package frozen spinach
- 8 ounces sharp cheddar cheese, the block kind
- 14 ounces cottage cheese
- 3 eggs
- 2 tablespoons butter
- ritz cracker
Recipe
- 1 defrost the spinach and squeeze out as much moisture as possible.
- 2 try to squeeze it some more -- 1 is a really important step.
- 3 crack eggs in separate dish and slightly beat.
- 4 chop cheddar into cubes about 1 inch or smaller.
- 5 combine all ingredients except crackers in mixer or food processor.
- 6 turn mixture into a lightly greased casserole dish.
- 7 top with cracker crumbs, you might not have to use a whole sleeve.
- 8 bake in 350°f oven for one hour.
- 9 enjoy!
