Broiled Chili Chicken For 2

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 2
  • 1 1/2 lbs chicken pieces
  • 1/4 cup butter, melted
  • 2 tablespoons wine vinegar
  • 2 teaspoons chili powder
  • 1 teaspoon salt

Recipe

  • 1 set oven control at broil and/or 550 degrees.
  • 2 place chicken skin side down on a rack in a broiler pan.
  • 3 mix butter, vinegar, chili powder and salt; brush part of mixture on chicken.
  • 4 broil chicken with top 7 to 9 inches from heat, basting occasionally with butter-chli mixture, about 30 minutes.
  • 5 turn chicken; broil until tender, 20 to 30 minutes, basting occasionally with remaining mixture.
  • 6 if it is not possible to place the broiler pan this far from the heat source, reduce temperature to 450 degrees.
