Broiled Ginger Chicken

Ingredients
- Servings: 4
- 1 -2 1/2 lb chicken
- 1 teaspoon chopped ginger
- 1 teaspoon minced garlic
- 2 teaspoons olive oil
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 1/4 cup lemon juice
- to taste salt and pepper
- 2 ounces melted butter (optional)
Recipe
- 1 split chicken in half.
- 2 blend remaining ingredients except butter.
- 3 place chicken in a zip lock bag and pour the marinade over the chicken halves.
- 4 exhaust as much air as possible, seal, and set aside for 15 minutes.
- 5 drain chicken and broil on both sides while basting with the marinade. continue cooking and basting for about 25 minutes or until chicken is cooked.
- 6 serve with melted butter if desired.
