Broiled Ginger Chicken

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 -2 1/2 lb chicken
  • 1 teaspoon chopped ginger
  • 1 teaspoon minced garlic
  • 2 teaspoons olive oil
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 1/4 cup lemon juice
  • to taste salt and pepper
  • 2 ounces melted butter (optional)

Recipe

  • 1 split chicken in half.
  • 2 blend remaining ingredients except butter.
  • 3 place chicken in a zip lock bag and pour the marinade over the chicken halves.
  • 4 exhaust as much air as possible, seal, and set aside for 15 minutes.
  • 5 drain chicken and broil on both sides while basting with the marinade. continue cooking and basting for about 25 minutes or until chicken is cooked.
  • 6 serve with melted butter if desired.
