Breakfast Bars

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 cup honey
  • 1/3 cup butter
  • 1 cup of unsalted raw mixed nuts, chopped
  • 1/2-1 cup of shaved unsweetened coconut (use to your taste but completely optional if you don't like coconut)
  • 1/2 cup pitted dates, chopped
  • 1/2 cup prune, chopped
  • 1/2 cup dried apricot, chopped
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 360°f.
  • 2 grease or butter an 8x8 square tin pan.
  • 3 heat honey and butter in a saucepan and stir until butter has melted and is well combined with honey. turn off the heat and add mixture to all other ingredients.
  • 4 mix all ingredient well and pour into the prepared pan.
  • 5 bake for 30 minutes.
  • 6 cool in refrigerator until set. ( about 30-45 min,).
  • 7 cut into bars and wrap each bar individually with wax/baking paper as they are sticky! then store in an airtight container in the refridgerator.
  • 8 ***note that you will want to eat these straight from the fridge as warmer temperatures with soften the bar up too much.
  • 9 prep time doesn't include cooling and cutting the bars afterwards.
