Banana And Passionfruit Butter

Ingredients

• 2 medium bananas, peeled
• 2 passion fruit
• 2 lemons, grated rind and juice
• 250 g butter (8 oz.)
• 1/3 cup sugar
• 1/4 teaspoon salt
• 2 egg yolks, beaten
• 1/4 cup orange liqueur

Recipe

• 1 mash the bananas.
• 2 halve the passionfruit and scoop out the pulp.
• 3 place all the ingredients into the top of a double broiler saucepan and cook over a medium heat, stirring or whisking until thickened.
• 4 bottle in sterilized jars and seal.
