Cheesy Rice And Green Chili Casserole

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 10
  • 1/4 cup butter
  • 1 cup chopped onion
  • 4 cups cooked long-grain rice
  • 2 cups sour cream
  • 1 cup creamy cottage cheese
  • 3 (4 ounce) cans mild chopped green chilies
  • 2 cups grated sharp cheddar cheese

Recipe

  • 1 preheat oven to 375.
  • 2 lightly grease 12 x 8 inch baking dish.
  • 3 saute chopped onion in butter for 5 minutes. remove from heat.
  • 4 stir in cooked rice, sour cream, cottage cheese, green chilies, plus salt and pepper to taste.
  • 5 layer half of rice mixture in baking dish and cover with 1 cup of grated cheddar cheese. repeat with rice and end with top layer of 1 cup grated cheddar.
  • 6 baked uncovered for 25 minutes or until bubbly hot.
